INGREDIENTS

  • 3 oz. (1 can) Canned Tuna, drained
  • 150 grams Sweet Potato
  • 1 medium Green Pepper, finely diced
  • 1 tsp. Chutney
  • ¼ cup Green Onion
  • Lemon Juice
  • Salt and Pepper to taste

DIRECTIONS

  1. Begin by preheating the oven to 300 degrees F.
  2. Prick the sweet potato with a fork from all sides. This is important to allow steam to vent.
  3. Place the whole sweet potato in the oven and bake for about 20-30 minutes or until soft inside.
  4. While the potato is baking, combine the tuna with the green peppers, chutney, onion, and salt and pepper.
  5. After the sweet potato has finished baking, remove from the oven and slit lengthwise.
  6. Top the sweet potato with the tuna mixture and then squeeze on some lemon juice and serve immediately.
